Gluten Free Asian Chicken Lettuce Wraps

2.5 Boneless Chicken Thighs
3/4 Cup orange juice
1/3 Cup Coconut Aminos
2 tbsp tamari sauce
Himalayan sea salt (Flavor as desired)
Granulated garlic (Flavor as desired)
Granulated onion (Flavor as desired)
Sweet & Spicy Sauce:
2 Cups Chicken Broth
2 tsp xantham gum
2tsp Orange juice
2 tbsp Coconut aminos
1/3 cup of coconut sugar or alternative sweetener
1/8 tsp red pepper flakes


Place all ingredients in a bowl or freezer bag and marinate for 2-3 hrs. Make sure chicken is covered.
After the chicken is marinated put Avocado oil in a large pan to fry the chicken on medium heat for 15-17 minutes or until chicken is browned and cooked.
For the Sauce: 
Heat in a pot on low. You can add more red pepper flakes for desired level of spicy
To Serve: 
Slice chicken thighs into strips
Serve on Butter lettuce
Top with sliced cucumber, cilantro, peanuts and our homemade coleslaw
